iChat Can't See Old People.
The reason that your AOL IM buddies seem to be offline when using Apple's OS X iChat, is that they are on an older version of AIM.

For you to be able to see Windows AIM users, they need to be using AIM v 4.8.2790 or later.

If you want to use another AIM client try Adium, it rocks!
