Roasted Punched Potatoes
Saw this recipe in the Boston Globe MAgazine and decided to try it with small red potatoes.

Roasted Punched Potatoes recipe
in Boston Globe.
First I lined the potatoes up on the baking sheet.

Olive oil, salt, pepper. #RoastedPunchedPotatoesSteve Garfield
Oil, salt and pepper on the baking sheet.

Not shown:Place potatoes on baking sheet and bake for 25 - 30 minutes until able to pierce easily with a fork.
Remove from oven and cool for 10 minutes.
Punch the potatoes with a pint glass.
PUNCH!
Flattened.

Brush with oil.

Sprinkle with salt and pepper.

Bake again for 10 - 20 minutes.
Roasted Punched Potatoes came out great.
