Brendan O'Regan, then the youthful manager of the Foynes catering establishment believed passengers would welcome something "stronger" than the usual beverage...something that would have an Irish flavour. The challenge to create an original Irish beverage was picked up by Mr. Joe Sheridan, then the Head Chef at Foynes who, after some research perfected what is now known as Irish Coffee.
