Chocolate Cinnamon Strip Cookies
Chocolate Cinnamon Strip Cookies by Carrie
1 1/3 cups sugar
1 Cup (2 sticks) PLUS 2 Tablespoons butter, softened
2 Eggs (Room Temperature)
1 teaspoon vanilla
3 Cups All-purpose flour
1 teaspoon baking powder
1 cup (6 ounces) dark chocolate chips
3 tablespoons sugar mixed with 3/4 teaspoon of cinnamon for top
Heat oven to 350 degrees.
Beat 1 1/3 cups sugar, the butter, eggs and vanilla in large bowl.
Stir in flour, baking powder and chocolate chips.
Divide dough into 4 equal parts. Shape each part on lightly floured surface into a roll, 1 inch in diameter and about 15 inches long.
Place rolls on ungreased cookie sheets; flatten slightly with fork to about 5/8-inch thickness.
Mix 3 tablespoons of sugar and the cinnamon; sprinkle over the 4 logs.
Bake 13 to 18 minutes until light brown on the edges. Slice into about 1-inch strips while still warm. Makes about 5 dozen.
Note:
Just make sure to not over cook them and cut them while they are still warm. Enjoy!
